Recipe: Artichoke & Cannellini Bean Dip

It’s been a little while since I’ve shared a dip recipe with you lovely folk, but I’m back with an absolute winner today. I spent the shortest day of the year at a Winter Solstice event with some friends (complete with an amazing bonfire!) and we took along a little picnic of snacky foods, and this artichoke & cannellini bean dip was one of my contributions. It’s incredibly simple to make but carries quite the flavour punch, so it’s a definite winner in my books!

Recipe: Sesame Soba Noodle Salad

I seem to be in a bit of a food pattern at the moment, rotating between various warming curries for dinner (this potato & pea one is on high rotation!), and fresh, noodle-based salads for lunch. I figure this way I’m getting all my food bases covered! This sesame soba noodle salad has been a firm favourite for work lunches, the flavours develop over time so it’s perfect for a day or two of leftovers, plus it’s super quick and easy to whip up!

Recipe: Tofu Pad Thai

So I got some pretty exciting news on the weekend (which if you follow I Spy Plum Pie on facebook or instagram you may have already seen!) – this little slice of the internet was announced a finalist in the Kidspot Voices of 2015 competition, in the Home & Wellbeing category. I’m not going to lie, I’m pretty excited! So what better way to celebrate than with one of my favourite easy dinners – tofu pad thai!

Recipe: Choc-Oat Cookies

We recently held a bake-sale at work to raise funds for Nepal, and I figured you can’t go wrong with good ol’ fashioned choc-oat cookies! Unfortunately I was then too sick to actually take them to work on the day of the sale, but they were still all devoured by my team the next day! Plus, we raised lots of money so that’s really the main thing!

Recipe: Spiced Pumpkin Lentil Salad

I seem to be eating a whole lotta pumpkin at the moment, but really, that’s a-ok with me! Anything with pumpkin in it seems to not only be delicious, but comforting as well, so I’ve been chopping and roasting it pretty much non-stop! That’s where this salad came from – hearty enough for me to take to work thanks to the base of both brown rice and lentils, plus with the flavour of the spiced pumpkin, it really is a winner! So here we go, my spiced pumpkin lentil salad!
