Recipe: Sesame Soba Noodle Salad

I seem to be in a bit of a food pattern at the moment, rotating between various warming curries for dinner (this potato & pea one is on high rotation!), and fresh, noodle-based salads for lunch. I figure this way I’m getting all my food bases covered! This sesame soba noodle salad has been a firm favourite for work lunches, the flavours develop over time so it’s perfect for a day or two of leftovers, plus it’s super quick and easy to whip up!

Ingredients List

Dressing

  • 1/4 cup peanut or grapeseed oil
  • 3tbs sesame oil
  • 1tbs chilli (or to taste)
  • 1/4 cup dark soy sauce
  • 2tbs lime juice
  • 2tbs balsamic vinegar
  • 2tbs brown sugar
  • 2cm piece of ginger
  • 2 cloves garlic
  • Salt

Salad

  • Packet of soba noodles
  • 2 carrots
  • 2 small red capsicums
  • 200g snow peas
  • 1 cup bean sprouts
  • Half a bunch of spring onions
  • 1/4 cup sesame seeds

Steps

  1. Combine oils, chilli, soy, lime, balsamic and sugar in a bowl and whisk together
  2. Finely grate the ginger and mince the garlic and add to the dressing with a pinch of salt, whisking well to combine. Set aside
  3. Cook the noodles according to packet directions then drain and rinse thoroughly under cold water. Set aside
  4. Thinly slice the carrots (I use my spiralizer), capsicums and snow peas
  5. Combine the noodles, carrots, capsicums, snow peas and sprouts and toss well to combine
  6. Pour over the dressing and toss through
  7. Thinly slice the spring onions and sprinkle over the salad
  8. Toast the sesame seeds on a hot pan until lightly golden (be careful not to burn them!) and sprinkle over the salad
  9. Serve and enjoy!

The dressing is bursting with flavour, taking this otherwise pretty simple salad to a whole other level of deliciousness. I got so many jealous comments from colleagues when I pulled this out (so much nicer than a ham & cheese sandwich, that’s for sure!). It’s super cheap to throw together as well, so you’ve got no excuse for not picking up your lunch game!

Plus, you can always sub in and out veggies to suit what you have on hand – baby corn, sugar snap peas or mushrooms would all work really well too. Have a forage through the bottom of your fridge and see what you come up with, it’ll be delicious I promise (well, as long as the veggies haven’t gone funky that is…)
