Recipe: Cauliflower & Corn Soup

Melbourne has been teasing us recently with some days of beautiful sunshine, before descending straight back into winter with pouring rain and freezing temperatures. Even though I’m hanging out for Spring I am making the most of the weather by having winter warming meals like this cauliflower and corn soup. It’s full of flavour and is particularly delicious served with crusty bread sitting by an open fire. A heater works well too though!

Recipe: Broccoli and Parmesan Soup

I’m a big fan of broccoli and would happily just eat a bowl of it steamed with some lemon juice and chilli, but this time I decided to try something a bit different and make a soup, as that’s all I seem to be eating! The addition of the parmesan adds a nice bite and the potato helps to make it creamier and denser. A big bowl of this served with some crusty bread made me a very happy camper!

Recipe: Udon Noodle Soup

But wait, there’s more soup! I decided to turn this week into a soup frenzy so I could share lots of different recipes as we head into the depths of winter. This one is something have been making a lot lately, it’s a simple and delicious way to warm up on a cold winter night and can include lots of different veggies so is a great way to use up whatever you have in the fridge. As an added bonus it takes very little time at all so you can have a tasty and nutritious meal ready in a flash – perfect!

Recipe: Sweet Potato, Carrot & Chilli Soup

This recipe was inspired by the recipe Erica from Addicted to Handmade shared on her blog a little while back. I didn’t have the same ingredients that she did, but it was a great launching off point for a delicious soup! I’m loving finally owning a food processor as up until this point my soup making has been limited to chunky minestrone soups, and while I still will be making large batches of that over the winter as it’s always been a favourite, I can’t wait to try out all kinds of other flavour combinations as well!

Recipe: Pumpkin Soup

If you follow I Spy Plum Pie on facebook you would have seen I got a new toy recently (and if you don’t, maybe now is a good time to start?!). As an early birthday present my parents bought me a food processor and I LOVE it! It does everything I could possibly need including juicing, blending, mixing and chopping. Given the weather took a turn in Melbourne on Saturday we decided to try it out by making pumpkin soup, and it was a delicious success.
