Recipe: Mint Lemonade

If you follow I Spy Plum Pie on facebook you may have seen that I have been the recipient of an impressive stash of lemons from my parents trees in recent weeks. If you’re not, can I be so bold as to suggest maybe you should be? It’s as easy as clicking like in the box in the sidebar, or visiting here instead! Lemons never last long in my house as we all have a multitude of uses for them, but one sunny Saturday morning I decided to embrace my inner child and make some lemonade. I fancied it up a little bit with the addition of mint and the end result was delicious! I can see this being made over and over  this summer (well, as long as my supply of lemons holds up!) and I have a sneaking suspicion it might work rather well as a base for cocktails too!

Recipe: Banana Raspberry Bread

Living with 3 housemates can sometimes make it difficult to keep track of all the food in our fridge and freezer. We each have a section of our pantry and also share staples like spices, oils and sauces but given the small size of particularly our freezer sometimes things can disappear into the depths and be forgotten about. We recently did a huge clean out and discovered a rather large stash of bananas in the freezer (which I’ve been working my way through in smoothies!) so when I ended up with some overripe bananas I knew I couldn’t add them to the freezer pile so decided banana bread was required instead!

I usually make banana walnut bread in these situations but decided to mix things up a bit, and thanks to discovering additional raspberries in the freezer decided this was the go instead. I’m very glad I did as it was delicious – moist and sweet from the bananas with a nice tart bite from the raspberries. Perfect with a cup of tea and a flick through the newspaper!

Recipe: Orange Choc-Chip Cookies

I seem to be making a different batch of cookies every week at the moment which has made me fairly popular with my housemates! I made these cookies large and quite flat so they were crispy on the edges and more doughy in the middle, but if you wanted you could make them smaller (and then they might last longer!) but remember to shorten the cooking time – nothing worse than burnt biscuits!

Recipe: Sweet Potato & Broccolini Ramen

Despite the fact this looks like a pasta dish, that is in fact ramen on the bottom there! I whipped this up the other evening when short on time and ideas for dinner and I was super happy with the combination that I thought I should probably share! Everything cooks in under 20 minutes so then it’s just a matter of putting it all together and pouring some marinade over the top and you’re done!

Recipe: Orange and Hazelnut Salad

I was recently given some oranges from a friends tree and after using a lot of them in juices I decided I should be a bit more creative with the remainder of the oranges. Given my love of salads it seemed an obvious choice, and I decided to bulk it out with some fresh, crisp green beans and the addition of roast hazelnuts. It’s simple but turned out delicious and was happily devoured by friends when I took it to a barbeque.
