Recipe: Tofu Scramble

For some reason I don’t seem to share many breakfast recipes, despite the fact breakfast is possibly my favourite meal of the day! I’m going to rectify that today with this recipe for tofu scramble. It’s super easy to whip up,  very delicious and you can add any vegetables you have lying around! I went with capsicum and silverbeet this time (I have so much silverbeet growing at home I’m using it in everything at the moment!) but tomato, red onion, coriander, and kale all work spectacularly as well!

10 Ways With Asparagus

The return of asparagus season highlights that Spring has finally sprung and it’s time to start cooking lighter, fresher meals again. My love for this funny little vegetable has been pretty well highlighted these last few weeks, but given the asparagus season is unfortunately a little on the short side I thought I would share a few recipes starring asparagus from some of my favourite bloggers so you can enjoy as much asparagus as possible while there is still time!

Review: Little Lane Espresso, Coolum

As I mentioned in my post about my few days in Coolum, each day included a morning stop for coffee. Lucky for me, my dad had tried out most of the coffee options before I got there and had settled on Little Lane Espresso as being the best on offer. The cafe is tiny, with just a few tables down a laneway (hence the name!) and it wouldn’t have looked out of place in Melbourne at all. It was always busy with locals and tourists alike, with extremely friendly staff who not only made delicious coffee but stopped to chat and even remembered our orders after only a day or so of visiting – impressive! Recipe: Cashew & Cranberry Granola

After seeing macadamia granola recipes on both The Sticky and Sweet and 84th and 3rd I decided it was time I tried making my own granola, but went with cashew as my nut of choice and threw in a good amount of both cranberries and coconut to sweeten the whole thing up. It turned out really delicious and I have been loving it for breakfast with some coconut yoghurt and berries, or sprinkling it on top of smoothies for a bit of crunch. It’s so easy to make so you can personalise it to your own tastes without having to worry about added sugar or other preservatives. I have a feeling I’ll be making this very often!

Recipe: Easy Breakfast Beans

Usually when I have time to do a cooked breakfast I go straight for something eggy – baked, scrambled, poached you name it. Occasionally however I find myself hankering for something a little more hearty, and that’s where these super easy, super quick beans come in to play. The best part is they store well in the fridge or freezer so you can whip up a big batch and just reheat them during the week – perfect!
