With Spring in the air and delicious produce in the fruit & veggie shop I’m all about simple dinners that really allow the veggies to really be the star of the dish. I find risottos really fit this bill and today’s zucchini & pea risotto is a perfect example!


Recipe: Roast Pumpkin Risotto

I’m pretty happy that it’s autumn and therefore pumpkin season here in Australia as it’s up there as one of my favourite vegetables. It’s not only delicious but it’s amazingly versatile. I use it in everything – salads, burgers, curries, soup and now a risotto! I go through phases with risotto, I either make it a lot or go months without cooking it at all but I think it’s safe to say I’m back in a risotto phase right now!

The return of asparagus season highlights that Spring has finally sprung and it’s time to start cooking lighter, fresher meals again. I’m so excited that it is finally asparagus season again in Australia! I was very happy to find some in my latest veggie box delivery, and I’m hopeful that they keep showing up as they are such a delicious vegetable and so easy to cook. I’m sure my mum must find it funny that I’m now so enraptured by asparagus as I definitely wasn’t always – but I guess that’s all part of growing up!
