Recipe: Cannellini Bean & Basil Dip

My love for dips is well documented here on I Spy Plum Pie, and I’m always on the lookout for new flavours and combinations. I have made lots of hummus varieties, but use cannellini beans a little less often so it was time to expand my horizons with the humble white bean!

Recipe: Apricot Yoghurt Icy Poles

After spending our cold, rainy winter being inundated with delicious looking icy-poles (or popsicles!) on all the northern hemisphere blogs I read I decided that once the weather warmed up here I needed to play with some varieties of my own! So I found myself some moulds and then pondered over what flavoured icy poles to concoct. I had a bag of apricots waiting to be eaten so I decided to combine them with some yoghurt for an almost healthy frozen treat! (more…)

Recipe: Beetroot Relish

I received some beetroots in my veggie box recently and decided to use them for something a little different to what I normally do. Often I just add them to a juice or make a salad, but this time I thought I would grate them up and make a relish! The relish goes really well on burgers, as part of a cheese platter or even just on some bread as a snack – all perfect for this time of year! It’s super simple to make as well, just as long as you don’t mind getting pink beetroot juice everywhere first!

Recipe: Ginger Cookies

I wanted to make some thankyou cookies for a colleague who had been helping me out on a major project I have been working on over the last few months, and as we’re hurtling towards Christmas I thought it was only appropriate that I made him some spicy, delicious, ginger flavoured treats. Instead of traditional ginger biscuits which tend to be flat and crunchy like a gingernut biscuit, these are soft and doughy but still full of that delicious ginger flavour!

Recipe: Red Pepper Hummus

A few weeks back I started doing twice-weekly group personal training (did someone say summer is coming?!) and by the time I finish the session and make it home again I am super hungry. I have been trying to make sure I always have something healthy on hand to have a quick snack on before I get dinner prepared, and hummus has been perfect for that. Not only is it super delicious but the chickpeas are high in protein, so it’s ideal fuel for after exercise. I had made plain hummus, and sundried tomato hummus, so I decided it was time to have a play with a new flavour – and red pepper hummus it is!
