Recipe: Spinach Ricotta Rolls

I recently had a lunchtime hankering for some flaky pastry goodness so whipped up these spinach ricotta rolls and they really hit the spot. Not only are they super tasty, but they are incredibly easy to prepare, and best of all you can make them in advance and pop them in the freezer so you have delicious lunchtime treats on hand at all times!

Recipe: Black Bean Dip

My love of hummus has been well documented here on I Spy Plum Pie, with lots of variations showing up over the last few years. I decided to mix things up a little recently and make dip using one of my other favourite beans, so black bean dip it is! Now, this dip is definitely not going to win any prizes for how it looks, but believe me it’s well worth it for the flavour!

Recipe: Lemon Poppyseed Loaf

Over the summer I go to the cricket a lot (which you’ve probably noticed if you follow me on instagram!) and we like to take baked goods along to snack on along the way. This lemon poppyseed loaf is one such treat that I whipped up and it was rather well received, even if you do have to pick poppyseeds from your teeth afterwards!

Recipe: Date Fudge Slice

I’m not going to lie, this slice is not the prettiest thing I’ve ever shared here on the blog, but it sure is tasty! This gooey date fudge slice is deceptively healthy, it’s free from flour and added sugar and is both vegan and gluten free. It might be slightly messy to eat, but it’s worth it, I promise!

Recipe: Pear and Ginger Muffins

I’ve been on a bit of a ginger kick recently, putting it in everything from stir-fries to slices and now muffins! I wanted to make some muffins to take along to the football a few weekends back and I had some juicy, ripe pears sitting in my fruit bowl (which is actually a three-tiered cake stand, but that’s a little off topic!) so pear and ginger muffins it was!
