Recipe: Choc Banana Chia Pudding

I’ve been a fan of chia puddings for quite some time as they make the easiest grab-and-go breakfast options, and there are so many flavour options! I found myself with some rather ripe bananas in my fruit bowl one week so decided to put them to good use, and the result was a choc banana chia pudding!

The best part about these chia puddings is that they are so decadent tasting that you feel like you’re having dessert for breakfast, but they are also uber healthy! Perfect!

Choc Banana Chia Pudding | I Spy Plum Pie

Ingredients List

  • Can of coconut milk
  • 2 ripe bananas
  • 2tbs cacao powder
  • 1/2 tsp vanilla essence
  • 1/4 cup chia seeds

Steps

  1. Blend together the coconut milk, bananas, cacao powder and vanilla essence until smooth and well combined
  2. Pour into a bowl and stir in the chia seeds
  3. Cover and refrigerate for a few hours, or overnight
  4. Spoon into serving bowls and top with any thing that takes your fancy!

You really can top these with pretty much anything you have on hand. I went with fresh banana, coconut flakes and cacao nibs this time to stay on theme, but whatever tickles your fancy works!

It’s such a simple breakfast and it takes no time at all to whip up in the evening, leaving you with a delicious breakfast ready and waiting in the morning. It transports well and keeps in the fridge for a few days so is perfect for helping to streamline your busy mornings. Hard to beat that!
