Recipe: Chunky Choc-Chip Cookies

As much as I do love fancy, intricate foods sometimes all you need is a simple cookie. These chunky choc-chip cookies are so easy to whip up, take only 15 minutes in the oven and are a hit with everyone I have ever made them for. They go perfectly with a cup of tea, so are ideal if people come round unexpectedly as you can have them ready to eat in no time. They may not be the prettiest cookies you’ll ever see, but I’m okay with that if you are!

As an aside, I actually don’t generally use the word ‘cookie’ – as a kiwi-born Australian biscuit is definitely the term I normally use, however there’s something about these guys that just screams cookie at me, so cookies they are! Anyway, on to the baking!

Ingredients List

  • 125g butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tbs milk (I use almond milk, but any milk is fine)
  • 1.5 cups plain flour
  • 1 tsp baking powder
  • 1.5 cups choc buttons (I use a mix of white and dark which I think makes them even more delicious)

Steps

  1. Preheat oven to 180C
  2. Cream the butter and sugar until combined
  3. Add the vanilla essence and continue beating
  4. Lightly beat the egg then add it to the sugar and butter mixture – beat well to combine
  5. Mix through the milk
  6. Fold in the flour and baking powder
  7. Fold through the choc chips – the mixture will be quite firm but that’s okay!
  8. Using your hands form medium-large balls and place them on a baking tray
  9. Flatten them all slightly, then bake for 15-18 minutes
  10. Remove the cookies when they start to brown on top, don’t worry if they aren’t completely firm yet as they will harden out of the oven
  11. Leave to cool for a few minutes then place on a wire tray
  12. Enjoy still warm, or when they have cooled, both are great!

    I love how these are filled with bit bites of yum – just how a chunky cookie should be 🙂
