Since participating in the Sweet Adventures Blog Hop by making white chocolate and macadamia cookies I have been thinking about cookies a lot, so had to make some more! These are a little more on the healthy side but are still deliciously moreish and are perfect with a mid-morning cup of tea. If you don’t have (or like) cranberries you could use sultanas or apricot instead, but I personally think the cranberries work extra well with the dark chocolate.
Ingredients List
- 150g butter
- 1/2 cup brown sugar
- 1 egg
- 1tsp vanilla
- 1 cup plain flour
- 1/2 tsp baking powder
- 1tsp cinnamon
- 1 1/2 cups rolled oats
- 1/4 cup dried cranberries
- 1/2 cup dark chocolate (chips, or a chopped block
Steps
- Preheat the oven to 180C
- Cream the butter and sugar with electric beaters until light in colour
- Add the egg and vanilla and beat until well combined
- Sift in the flour and baking powder and fold through
- Add the oats, cinnamon, cranberries and chocolate and fold to combine
- Place spoonfuls onto lined baking trays and flatten slightly. Bake for 15 minutes
- Remove from the oven and cool on a rack then enjoy!
