I went on a big baked oatmeal run during winter, but in this warmer weather I’m all about this dried mango muesli. It’s so simple to put together and makes for a delicious and easy make-ahead summer breakfast. What more could you want!
Ingredients List
- 2 cups oats
- 3/4 cup coconut flakes
- 1/2 cup pumpkin seeds
- 1/3 cup chia seeds
- 1/3 cup hemp seeds
- 100g dried mango
- 4 dried dates
Steps
- Combine the oats, coconut, pumpkin seeds, chia seeds and hemp seeds in a bowl
- Roughly chop the mango and dates and add to the bowl
- Mix well to combine and store in an airtight container
Yep, that’s literally all there is to make this dried mango muesli! I never ate a lot of mango as a kid as my dad is allergic to it, so it’s not something that immediately jumps to mind when I think about recipes and flavours. However, whenever I do eat it I’m reminded how much I like it, so I have been thoroughly enjoying having this for breakfast over summer!
Some mornings I have this dried mango muesli with a little oat milk and topped with yoghurt and fresh mango, and other times I soak it overnight to make a bircher muesli. Both are equally delicious! It will last in an airtight container for a few weeks, but in my experience it’s well and truly been eaten before then!
Lucky it’s so quick and easy to whip up more! It’s become part of my Sunday routine to make enough of this to get me through the week – I keep thinking I should try other flavour combinations but it’s hard to beat this one!
