Sometimes I find myself getting in a bit of a rut with sauces and marinades, with the same thing ending up on meal after meal. This happened again recently so I decided it was time to try something new and after seeing mangos on special at my local fruit & vegetable shop I knew exactly what I wanted to make!
I didn’t eat a lot of mango growing up as my dad is allergic to them (what a horrible thing to be allergic to!) so I don’t have much experience cooking with them either. I have been trying to use them in more exciting ways than just smoothies and I think this sauce might be just what I needed!
Ingredients List
- 1 ripe mango
- 1/2 cup peanut butter
- 1/3 cup lime juice
- 2tbs brown sugar
- 3tbs soy sauce
- 1tbs hoisin sauce
- 2tsp chili paste (or to taste)
- 2 cloves garlic
- 2tsp sesame oil
Steps
- Combine all ingredients in the bowl of your food processor and blitz until well combined
- Taste and season accordingly
- Pour into a sealable container and store in the fridge for 1-2 weeks
The sauce is super versatile, you can use it to marinate tofu (and I have a recipe coming up very soon where I did just that!), as a stir-fry sauce, a dip or in homemade rice paper rolls, like these (rather shoddily rolled) ones! The possibilities are (almost!) endless!
