After being away last weekend I found myself with a pile of bananas that had somehow been overlooked so jumped into action and whipped up some banana choc-chip muffins to nibble on. Simple, easy and full of flavour – perfect for a mid-morning snack with a cup of tea!
Ingredients List
- 4 small/2 large overripe bananas
- 50g butter
- 2 eggs
- 1/2 cup milk (I used almond, but whatever you use is fine)
- 1 3/4 cups self-raising flour
- 1/4 cup wholemeal flour
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp ground ginger
- 2/3 cup brown sugar
- 1/2 to 2/3 cup choc chips
Steps
- Preheat the oven to 180 C
- Melt the butter and set aside to cool
- Mash the bananas in a bowl
- Add the milk, butter and lightly whisked eggs and mix together well
- In a second bowl, add the flours, sugar, cinnamon, nutmeg and ginger
- Pour the wet ingredients into the dry and fold together well
- Fold through the choc chips (I crushed mine into pieces as they were large choc-chips)
- Spoon into muffin pans and bake for 20 minutes
- Enjoy!
