These sticky cauliflower chickpea lettuce cups are seriously packed with flavour. They are also simple to make, delicious to eat and vegan friendly too! Perfect as a starter, or a tasty lunch option.
I slightly tweaked a recipe from Pinch of Yum
Ingredients List
- Large cauliflower
- Can of chickpeas
- Olive oil
- Salt
- Baby gem or butter lettuce
- Crushed peanuts
- Chives
For the Sauce:
- 2 cloves garlic
- 3 cm knob fresh ginger
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1tbs rice vinegar
- Chilli paste (to taste)
- 1tbs toasted sesame oil
- 1/2 tbs cornstarch
Steps
- Preheat oven to 200C
- Chop the cauliflower into florets and place on a lined tray
- Drain, rinse and pat dry the chickpeas and add to the pan. Toss to combine with the cauliflower
- Drizzle with oil and sprinkle with salt. Roast for 25-30 minutes, until the cauliflower is starting to char
- Meanwhile, finely mince the garlic and ginger, then combine with all other sauce ingredients, whisking well to combine
- Heat in a small saucepan until thickened
- Pour the sauce over the cauliflower and chickpeas and toss to combine. Return to the oven for 5 minutes, until thickened and sticky
- Spoon the cauliflower chickpea mixture into lettuce cups and top with peanuts and chives to serve
That’s all there is to these sticky cauliflower chickpea lettuce cups! They’re simultaneously sweet and spicy, crunchy and soft, and absolutely not short on flavour. Sure, they might be a little messy to eat but I promise they are worth it!
These sticky cauliflower chickpea lettuce cups make an excellent addition to a platter of Asian style dishes. Or alternatively as the entree to a delicious feast. In fact, I also had these as a light work-from-home lunch and I was definitely a happy camper that day!
