Thai Tofu Soba Noodle Salad | I Spy Plum PieThat’s all there is to this thai tofu soba noodle salad! I know the list of ingredients look long, but there’s lots of repetition and most are pantry staples too. Plus, it’s worth it for the end result – it’s seriously tasty. I love the combination of the soba noodles with all the crunchy vegetables, and the creamy dressing is just the cherry on top!

You can even make the dressing ahead of time, including marinating the tofu, which makes the whole thing even quicker when you’re ready to serve. Perfect for when you’re whipping up a few dishes for a lunch or BBQ and need to have a few things on the go at once. Either way, I just recommend you give this salad a try!
