One of my favourite ways to ensure I have healthy mid-week dinners is to whip up some patties on a Sunday. That way, I just have to bake them when I get home from work, serve with a salad and I’m done! These brown rice sweet potato patties are perfect for that – not to mention delicious!
I very slightly amended a recipe from Like A Vegan
Ingredients List
- 1 cup brown rice
- 350g sweet potato
- 1 small red onion
- Bunch of fresh parsley
- 2 cloves garlic
- 1/4 cup nutritional yeast
- 1tbs soy sauce
- 1/4 cup sesame seeds
Steps
- Cook the brown rice using your preferred method (I’m a rice cooker girl!)
- Steam or boil the sweet potato until soft, leave to cool then scoop out the flesh
- Finely chop the red onion and parsley (leaves and stems) and mince the garlic
- In a large bowl combine the cooked rice, sweet potato flesh, onion, parsley, garlic, nutritional yeast and soy sauce, stirring well to combine. Season with salt and pepper
- Spoon out 1/2 cup portions and shape into patties. Place on a plate or in a container and repeat with the rest of the mixture. Refrigerate for 30 minutes, or until ready to cook
- When ready to cook, preheat oven to 200C
- Pour the sesame seeds on a plate and roll the patty through to coat
- Place on a lined baking tray and cook for 30-40 minutes until golden on the outside
These brown rice sweet potato patties are vegan friendly and oh-so-tasty. They work really well in a burger, although my favourite way to serve them is with a salad or two on the side. Having them prepped and waiting in my fridge makes it so easy to get dinner on the table no matter what kind of day I had at work!
